Stuffed Bell Pepper : post workout

Post Workout Carb Meal: Stuffed Green Bell Pepper

Ingredients: Jasmine rice, 1 garlic clove, Del Monte stewed diced tomatoes, diced onion (about 1/4 cup per each bell pepper), ground turkey breast, reduced fat cheddar cheese (about 2 teaspoons on top of each bell pepper to garnish). 

1. take your ground turkey breast (you'll need about 1/3 a cup of ground turkey for each bell pepper), and while your skillet is heating up over medium high heat season it with chicken bullion and garlic. Once your skillet is warm spray it with your favorite non stick spray and add 1 crushed garlic clove. 

2. Once the garlic is turning golden add your ground turkey breast. use your ground meat masher or wooden spoon to divide up the ground turkey chunks. 

3. When your ground turkey is mostly cooked (about 15-20 minutes over medium heat) add in the diced onion, and tomatoes and stir the ingredients together.

4. After the ingredients have had a chance to stew together (about 3-5 minutes) spray your cooking spray one more time then add your rice. I fail at cooking rice (absolutely, positively cannot do it, no mater what recipe or kitchen gadget I use) so I normally use either minute made or the microwave rice pouches. Estimate about 1/4 cup of cooked rice for each bell pepper you're preparing. 

5. Mix the rice in and let it cook until the rice starts turning golden. Once your rice is golden in color turn off the heat and pull out your bell peppers. 

6. Preheat your oven to 350 degrees. Wash, cut off the top sections, and take out the seeds/center of your bell peppers. Spray an oven dish with non stick spray and load your ground turkey/rice mixture into you bell peppers then place them on the oven dish. Sprinkle the cheddar over your bell peppers and place them in the oven.

7. The peppers should be done in 15-20 minutes at 350 degrees depending on how cooked through you want your bell peppers. I normally like mine a little crunchy so I'll pull them out at 15 minutes.
