Recipe Faves #4 : stuffed bell peppers : low carb

Low Carb Stuffed Bell Peppers
The Breakdown:
Calories: 520 per serving (1 stuffed bell pepper)
Total Fat: 13g
Carbs: 25g
Protein: 72g 

Ingredients:
  Bell peppers (red or green work best), Salsa (store bought or home made) about 1/2 a cup per bell pepper, egg whites (about 1 per bell pepper), ground turkey breast or chicken breast (5 oz per bell pepper), reduced fat cheddar cheese, and green onions (about 1 from root to tip per bell pepper)

For this day I used canned fire roasted salsa, just your average store brand, 

Cook your ground turkey breast or chicken breast over medium high heat until it's mostly cooked through (takes about 15 minutes), then add in your salsa, 
add in your diced green onions, 
stir the mixture, if it's too dry add in a little (1/4 cup or less) of water and stir over medium heat. Then add in 1/4 cup of reduced fat cheese. 
Cut the tops off your bell peppers and clean out the seeds/extra parts on the inside. Stuff your mixture into the bell peppers and garnish the top with a sprinkling of cheese (about 1 teaspoon or so for each). Cook them in the oven at 350 degrees for about 7 minutes per bell pepper. Then to make the top golden finish it off with 3 minutes of broiling on high. Enjoy!
