Chop and grill 1 chicken breast (seasoned with chicken bullion and a low sodium seasoning of your choice: mesquite or Italian blend, or garlic and herb, etc). Once your chicken is cooked through turn off the heat and let it cool (if you're packing it for lunch at work place it in a dish then in your fridge for a few minutes for it to cool down).
Toss your grilled chicken breast with 1/4 cup baby spinach, 1/4 cup romaine lettuce, 1oz of reduced fat cheddar cheese and 1/2 a cup of fresh pico de gallo. The pico de gallo juice works as a great flavoring/dressing for the salad so there's no need to add anything else. This is an easy lunch to pack up for work or for on the go. Enjoy!
