Recipe Fave #8: Egg Plant Personal Pizza
Personal Pizza....only diet friendly...Oven baked egg plant strips covered in pizza sauce and ground chicken breast, stewed tomatoes, diced onions, diced portabella mushrooms and mozzarella. Yum!

Recipe Fave #7: Home made grilled chicken egg rolls
Grilled chicken, broccoli slaw and onion stir fry egg rolls... Yum!.....Plus a low input and quick snack...

Coat your stove top in non stick cooking spray, grill thinly diced chicken breast on your stove top over medium heat stirring until the chicken is turning golden (roughly 10-15 minutes).
Add in 1/2 of a diced onion and grill for about five minutes more.
Add in broccoli slaw and stir. Scramble 2 eggs and 1 egg white (save yolk in a bowl for later.
Mix 1 cup mozzarella with the eggs and pour over your chicken stir fry Mix until cheese is melted and eggs have cooked (5 minutes or so).
Grab your egg roll wrappers and egg yolk. Scramble the egg yolk with a little water (about 1/4 cup of water). Place 2 tablespoons of your stir fry mixture on the egg roll wrapper and wrap egg rolls (the diagram on the egg roll wrapper container is amazing).
Once wrapped coat in the egg yolk mixture and place in an oven safe dish. This makes about 10 egg rolls. Once all the egg rolls are wrapped broil over low heat in your oven turning them over ever 5 minutes or so until they're golden on both sides and enjoy!
Before/During ?
Trainer Lisa asked me to come up with a before/after kind of picture and a testimonial to be added to her site. This was pretty simple as she's literally the best trainer I've had the opportunity to work with since I began this fitness journey two years ago. That being said this before/during (I'm not the after yet and this just motivates me further) is seriously motivating and has motivated me to find new recipes and fitness challenges to keep it up. Going from a starting point of above 238 pounds (because really I couldn't get myself to check my weight until I'd worked out consistently for two weeks or so) to now just reminds me that I've a long way and next bit is a lot less than what I've done so far. :-) Being that I was about the most unathletic person you could imagine and I've managed to change my life...anyone can!
